Happy Wednesday! Can you believe it is almost September already? Ugh, how did the last month go by so quickly. I’m hoping that the warm weather holds out as long as possible this year, because while I love fall, I am not ready for any type of cold weather, period! I want to spend as much time outside as I can before I’m stuck inside for half the year. I mean it’s bad enough that football season is starting already so I’ll be losing my TV privileges for the next six months – HAHA – so I don’t really want to be stuck inside the entire time either!
But with the colder months ahead, I find myself gravitating towards some heartier breakfast options because sometimes a smoothie protein shake isn’t my favorite go-to for a 50 degree day! And while I loved oatmeal as a kid, I find just eating plain oats to be rather boring and unenjoyable. Thank goodness for overnight oats – they have changed the game for me! There are so many different combinations and it literally takes me less than five minutes to throw everything together and stick it in the fridge. Check out my all time FAVORITE overnight oats recipe that you’re sure to love! After all, you can’t go wrong with chocolate or peanut butter anything, people!

Ingredients:
½ cup Rolled Oats
2-3 tsp. Natural Peanut Butter or any Nut Butter
1 tsp. Cocoa Powder
2 tsp. Shredded Coconut (optional)
1 tsp. Ground Flax Meal
1 tsp. Chia Seeds (optional)
1 tsp. Vanilla
2 tsp. Pure Maple Syrup or Honey
½ cup Milk (of your choice)
Sprinkle of Sea Salt
Assembly Instructions:
- Combine all ingredients listed in a small bowl or mason jar (I find this to be the best and easiest method of storage) that can be sealed. Stir well.
- Refrigerate overnight.
Side note: Chia seeds swell up in liquid and they tend to get stuck in your teeth, so just beware if you happen to not have any floss nearby after you eat these! I don’t really care for chia seeds too much, so I just omit them but it’s totally up to you!
And that’s it! How easy is that, seriously? When I get my overnight oats out to eat, I like to sprinkle some more coconut flakes and add a sliced banana on top. You can also add more peanut butter, chocolate chips or any other toppings you think would be good!
Over the summer I love to eat these cold right out of the fridge, but feel free to warm them up a bit as the weather gets colder. Just add a splash of milk and pop in the microwave for a few seconds and you are all set! This quick and easy breakfast option is sure to become a favorite part of your weekly routine!
